can this be used for installing glass panels to aluminium greenhouse frame?

It's very thick for an aluminium greenhouse, you would need to compress it first or the external clips that hold the glass in the frame, if your greenhouse is anything like mine, wouldn't fit. fro a weather point of view, in my view, I'm sure it would be fine.

Can this be over painted or spray painted on a vehicle

The item is paintable however it does not cure, perfect for sealing a leak and painting over in construction however I wouldn’t recommend using for a vehicle as this could create a weak point

Will this sealant set? Don’t want to permanently seal my headlight?

I've used it to seal behind an indicator unit in the front wing and it 'sets' to a pliable tar-like consistency, very similar to the OEM stuff used in headlights. I think if you were to use it in your headlights it would do the job well as it'll be weatherproof but if you ever needed to open them up a quick blast of heat gun would soften the tape and let you get in there.
