Does this fold lat for storage

No does not fold flat - a good product but be warned the assembly instructions are crap - be careful to make sure the two main up struts are facing the right way or you will have to dis- assemble to fit the shelf - they could make it all so much more simple but doubt they will bother!!!!

How steady and stable is it, so it doesn't wobble?

It’s stable for its intended use. It doesn’t feel wobbly or light weight. The wheels have breaks and the frame is solid.

Is it quite easy to adjust the height to standing up when sitting down? Does it inter change easily?

It is not difficult to adjust the height (adjusted using two hand screw). However, there is limitation how low it can go down.

£85.99 for a metal stand? Am I missing something? Does it make coffee as well?

Surprisingly it doesn't make coffee but it can be used as a superb computer stand by people who understand quality and how to use it correctly. Maybe you should buy a coffee maker instead. If it's too expensive for you don't buy it, buy a cheap coffee pot.
