I would use the fine grit. This will work allmost up to razor sharpness. Make sure you break the grit off, by grinding against the structure of the cutting edge. Excellent sharpener! Used for sharpening small blades on my penknife and leaves a sharp edge.

The only way I could sharpen my bread knife

I didn't know these existed up until buying this one. I though my knife would need to be replaced. This file works well but you do need to practice as it's not as simple as it looks. Time and watching some YouTube videos then you'll get to grips with it. I'm not too keen on the folding handle design but it does help with storage.

Easy to use

A little rattling when closed, means this item looses a star. Easy to use. Sharpened two knives so far, and seems to be solid enough to keep on.

Disappointing. Before I got half way of sharpening my bread knife, all the diamond coating had disappeared. If anything half was sharpened OK, the other half was not. Far too expensive for the quality that delivers.
