What size tap would I need to switch out for a stainless steel?

The outside diameter of the threaded tube is 17mm. It seems to be a standard size. I replaced the tap with item B07H78JL66 but kept using the gasket that came with the jar, which is perfect. So, in order, the parts I used are: Metal tap; Metal washer; Original gasket, ready-fitted to jar; Metal washer; Metal nut. Have the concave side of the washers facing the gasket. Only tighten enough to stop the tap spinning in use. This made it water tight with water filled right to the brim. I didn't need to use tools. The original plastic tap isn't too bad. I think it would be fine for drinks without floating bits which might stop the tap from closing properly, though maybe the flow rate would be less. It has a spring inside, but that is isolated from the liquid. The tap body unscrews for cleaning or to see how it works.

Is it possible to remove the lid completely?

Yes. By pinching together the 'arms' of the wire loop around the glass lid it can be removed. The other wire around the jar could also be removed if needed, but is much stiffer so I left it in place rather than risk breaking the jar.
