Actually haven't tried to flip an egg, just cook it slowly and it cooks perfectly right through. I should imagine if you wanted to, you wouldn't have a problem though.

Can I use this to make Paninis? Or better to buy a different machine?

Ive not used thus but my guess would be panini needs a press so extending hinge. If this is just a hinge then there is no "press". Maybe do panini 50% then turn around?
