Q: What type of load do these put on the posts, as far as tension? Would a 6x6 treated timber deflect if used for all 3 anchor points?

I have done general construction all my life. For most projects they would be more than heavy enough. For my smallish 10x10x14 sail , 8' ground clearance, I am using 4x4's. What does matter SIGNIFICANTLY is that the posts are set firmly in the ground. That would be determined by how much is above ground, the type of soil, and if it is set in concrete. 3' would be the minimum for 8', more if taller. Angling them 5 degrees away from the line of pull is standard procedure.
