Can you use metal utensils on this griddle? Can you sear meats on it, chips, steak etc thanks

Yes I always use metal utensils and it's good for searing meat.....it's something I wouldn't be without.

Which oil is best to use for seasoning?

I use rapeseed oil as this has a high smoke point. After each use I put it back on the hob after washing (under running hot water), warming it up on a medium heat and pour a small amount of oil on the cooking surface and use some kitchen paper/roll to rub it all over. Leave for another 5 mins, switch off the heat, allow to cool.

What kind of slice would you recommend with this skillet? I've just ordered this pan as I've had no end of problems with non stick pans. Thanks in adv

I just use pair of ordinary stainless steel ones. "Prestige" I think but any will do - just take advantage of the low rim and keep the angle as low as you can. The surface of the Lodge pans isn't fragile and tolerates the sort of wear they get when in use.
