First of all, this is a heavy canvas apron. My husband is 5’11” and it comes about 5” above his knees. I would not wear this myself (I’m 5’6”) but if your wife is dealing with heavy tools or chemicals, this may be a good choice

is it possible to remove dried glue from the apron?

It would depend on what kind of glue. I found wood glue to come right off.

What size does this come in? description says m-xxl but there is not an option to select a size.

It is one size with adjustable straps. My husband is 5'8" and weighs about 270 ( yes, he's chubby ) but he can't clasp the tabs because his shoulders are bad and he can't reach behind himself any more.
