The reason we're using the Jewish name hyssop, is to distinguish zaatar herb from zaatar the mixture, because zaatar is a reference to both a distinct herb and the mixture (traditionally with sumac and sesame seeds). The zaatar herb or hyssop is a distinct specie in the mint family along with thyme, oregano, marjoram, savory BUT it is distinct and native to the Middle-East or Levant region. It is also called Syrian oregano or Lebanese wild thyme, or just wild thyme. it is a herb that historically was found in the wild, but now it is either a protected species or extinct in the wild. Therefore, people do cultivate it but it is not easy to cultivate well and difficult or expensive to find good cultivators and supply. That is why most zaatar mixes contain substitutes for this zaatar/hyssop herb that often include a combination of common Thyme, Oregano, Marjoram, and Savory herbs, with varying degrees of flavor qualities. Our Tyme Foods zaatar mixture contains this distinct zaatar/hyssop herb and our partner plantation has been perfecting its cultivation for over 20 years in Lebanon. **Q: How do you sanitize it? ETO, irraidiating, steaming?** A: The zaatar herb is washed and dried before processing at the farm in Lebanon.
