What gage of wire or string will fit through the hole in these beads?

1mm string will fit inside these pearls. I used them with satin rope and it turns out just fine.

Will they sink in water ?

They're made out of acrylic (a type of plastic). So no, they won't, or at least shouldn't, sink on their own.

Is the luster coating on top made of fish scale or mother of pearl mixture?

The pearls are plastic. Not cultured.

Are these safe for the dryer?

You can put them in the dryer only if you are doing the very low heat or tumble dry but I suggest not because they can get scratches and lose their shine
