Perfect omelette pan, but read these instructions for cleaning off the wax and seasoning!
Read the following instructions on cleaning off the beeswax finish. If you do so, you will love this pan. If you do not, and try to clean off the wax by washing it in the sink, you will hate this pan. The pan comes with a protective beeswax finish that must be removed before the pan is seasoned, and used. It literally takes 30 seconds to do it properly, or 10 hours if you do it wrong. Simply heat a kettle of water to boiling, and pour it over the pan. Wipe out any residue and repeat, if necessary. Voila. Beeswax gone. If you are concerned about the beeswax going down your sink, then do this outside, away from any landscaping you care about, that would be harmed by the hot water. If you try to clean off the wax in the sink with soapy water, you will still be doing it 8 days from now. Don't reinvent the wheel. Only heat will melt wax, whether it's beeswax or any other kind of wax. The next step, seasoning the pan. In a nutshell, cover the bottom of the pan with oil that does not have a strong flavor, heat for 5 minutes over medium heat. Turn off the heat, move off the burner, and let the pan cool. Pour off the oil, wipe clean with paper towels, and repeat the process a 2nd time. The pan is now seasoned and ready to use. After that, treat this carbon steel pan as you would cast iron. Do NOT clean it with soap and water, and do NOT heat shock the pan. Rinse it off with hot water after use, scrubbing it with a brush or dishrag as needed, with NO SOAP, dry thoroughly right away, and the pan will perform beautifully. It will develop a non toxic non stick finish without any chemicals. I read another review that this small pan would not sit correctly on the counter or stove because the handle is too long. That has not been my experience. My pan is perfectly balanced, and will sit flat and not tip over, even empty. This sized pan is absolutely perfect for making individual omelettes. They finish rapidly, so you can crank out omelettes for everyone on a weekend morning. Enjoy! Update: I've now used this pan to make omelettes about 10 times. Mauve crepe pan, where have you been all my life. This is better nonstick than any of the chemical nonstick pans I've ever used, and all without the chemicals. It's absurdly easy to keep clean (it just wipes clean with the merest spray of water.) I never could get an omelette to turn out right, and now I'm turning out perfect French and American style omelettes. (The difference is the French omelette is stirred and shaken continuously for a curd consistency with no browning, while the American version is more browned.)

Perfect, no-stick crepes!
My 8-inch pan arrived yesterday and I followed the instructions exactly as written to remove the beeswax coating and to season the pan. Easy, peasy. And as others suggested, be careful where you pour the boiled water/melted beeswax mixture so you don't ruin your sink, pipes or outdoor plants. I pulled some large cans out of my recycling bin and poured the beeswax water into them and since we were in the midst of an epic snow storm here in Pittsburgh, I set the cans outside and the water froze and I tossed them in a trash bag, so no mess inside the house. Today, I used my new pan to make 70 crespelle for manicotti for Christmas dinner. The pan works so well, I didn't even need to periodically spray Pam to keep the crespelle from sticking. They cooked perfectly and flipped with ease. I have a gas range and used a low heat, cooking each crespelle for 1-2 minutes. I can't tell you how smoothly the entire process went, in large part because of this pan! When I was finished and the pan had cooled, I ran it under some warm water, used a dish towel to dry it and put it in the cupboard. Even if it doesn't come out of the cupboard again until Easter or even this time next year, the small amount of money I paid for this pan is certainly well worth it. So happy with this purchase.

Best cooking purchase I made
Amazing crepe pan! I have struggled to find a good crepe pan, I went through a lot of cheaper ceramic non stick crepe pans, and they all had big hot spots, and after few uses, the coating was scratched up. This pan can take a beating and still works as brand new, only thing to remember is to season before use!

Bee wax is a bitch and more
I read others' review and was ready to deal with the bee wax. The one thing I wasn't ready was how to dispose the bee wax contaminated really hot water. I couldn’t risk my old house’s drain to be clogged up by it. I ended up letting it sit in my sink until it cooled and hardened. It took me a long time to clean my stainless steel sink. Not only that, I couldn’t removed the wax evenly from the pan either. I know what cured pan look like. My pan doesn’t look good at all. But wait! Worst is yet to come. The pan I got is an 8” crepe pan that doesn’t stay flat. The handle is too long that also means too heavy for the size/weight of the pan. So when I let go the handle, it tips over. It sucks! The quality of the pan is really good. I’m sure the larger size pan would stay flat. I just don’t want to go through the bee wax again unless someone shows me better easier way to handle.

Great pan, but came slightly damaged
This is a great pan! I have an 11 inch de Buyer Mineral B frying pan that I love. I wanted an omelette pan and decided to give this pan a try. The beeswax coating is a lot thicker on this pan than on the de Buyer pan. However, it’s not hard to remove. I first set the pan in a plastic dish pan and poured a tea kettle full of boiling water over the inside and let it soak for about two or three minutes. Poured off that water and poured another tea kettle of boiling water over the pan. I took a small, flat nylon pan scraper (Lodge sells them -$5.00 for two) and scraped the wax off the inside and then the outside. One more kettle of boiling water and few more scrapes with the scraper and it was free of wax. Washed and dried it and began seasoning it. This is when I noticed that the pan was slightly damaged. It appears that the pan was dropped, as the it has a deep nick on the outside front of the rim and side of the pan is slightly bent so that it’s no longer round. The beeswax coating was so thick on the pan that I didn’t notice the nick or the bend when I was scraping it. Since I’d removed the beeswax, it was too late to send back. The bottom of the pan is still round and the damage didn’t affect the integrity of the pan, so I’m not too terribly upset just a little disappointed. Over all, this pan was much easier to season than my de Buyer pan.. I will say, after I washed it I set it on the counter and went to get a towel to dry it and came back and it had already started rusting, so be sure to dry it immediately after initial scraping and washing. I followed the manufacturer’s instructions for seasoning , just because I wanted to see if it worked better than my normal method. It worked pretty well. The pan heats fast and evenly. I seasoned it twice before frying an egg. The egg pretty much slid around the pan and came out perfect.

you won't need to replace this unless you heat to warping. which is actually hard to do.
I discovered carbon steel many years ago, probably right when it started to get popular, or re-popular, here in the US. I decided to try this for daily use alongside the heavier 12" iron skillet. I don't make a lot of crepes but this low side pan makes a perfect egg and omelet pan, as well. And if you only need to make one pancake at a time, look no further. This is thick enough to cook and heat evenly and retain heat. It's thin enough that it doesn't weigh a ton. If you need lightweight, look into aluminum. These steel pans are not lightweight. The handle is riveted--there are rivets inside the pan at the handle. This has never bothered me at all. If it bothers you, check out Matfer. The balance is good- the handles don't over-balance the pan. Some pans I've tried from other brands have handles so heavy they lift the pan off the burner. These don't do that. These are also angled well for my use. I've used a few different brands of steel pans in various shapes, and can now say that I prefer the Mauviel for the style of corners- there' more curvy and rounded. The other brands I tried are hard corners, which don't make much difference in terms of heating and cooking, but I notice it when flipping flopping; smoothing scraping and cleaning.

Good, but seasoning headache
The seasoning of the pan had been a nightmare and not fully satisfactory. We have woks and other large pans of carbon steel we use. But none had been bad at searching like this. So the are still spots that stick. It's getting better but it's been a bit disappointing for that reason.

Excellent pan - problem with the beeswax
First I need to say these pans are excellent. I had a pair of crepe pans 15 yrs old. Lost when we moved, those are replacements. VERY pleased with them. One problem: The come coated with beeswax to prevent rust. I tried several ways to remove the beeswax finally had to put the pans one at a time in the kitchen sink and pour boiling water on the pan to wash off the beeswax. Nothing else would work.

Por que no compré de esos antes??
Que buen material... En lugar de haber gastado tanto dinero en Tefal, hubiera comprado de estos sartenes...! dura toda la vida y no es toxico como los tefales... Me impresiona como no pego despues de muy poco tiempo... A veces se pega un poquito las cosas, pero muy poco... y eso va mejorar con el tiempo!
