How thick is this pad?

It's about 8mm thick. Very grippy. It doesn't slide around as the rubber is very soft. Things don't slide around on top of it either. It's so good that I bought another 2 . One for my bedside and two for my 2 cars. Damn good piece of kit.

Can I use Apple Carplay when charging on this device?

You would need a wireless device plugged into your infotainment system to access car play wirelessly. Then plug this into 12v power supply and all should work fine.
