Polycarbonate Chocolate Mold, Pyramidal Bar 123mm x 27mm x 12mm High, 8 Cavities

This mold is much larger and heavier than I expected it to be, but it makes perfect little bars, each one using about an ounce and a half of chocolate. My favorite inexpensive high quality tempering chocolate are the Guittard 74% wafers. They’re often on sale at Whole Foods, but even at the regular price of under $10 for 12 ounces, they’re a great bargain. I find the go really well with almost anything I mix in.

Really cool design and tried right away, it works perfectly. Very fun to work with and like the slim design.

I am starting to get into chocolate tempering. These are about 8 oz of chocolate the whole tray, give or take. They are very cute. When you temper the chocolate correctly, a gentle twist will release the chocolates very easily. They are also easy to clean (no difficult to reach corners to clean). They make for very nice presentation if you are preparing the chocolate for a gift.

These molds are easy to use and very sturdy. Only wish they were a little deeper

I loved the ability to have a more dimensional chocolate bar vs. flat. I used Strawberry Inspiration from Valrhona with a dark chocolate/walnut base. Bar came out easily. Because of the depth, this is a pretty heavy bar - my recipients ate over course of a few days.
