No this is not an induction hot plate . You can use any cookware including glass ware .

When set to simmer does it still boil or does it actually simmer?

We use the simmer setting for keep food warm, never seen it boil.

Is this safe to use on a top of wood table?

Probably is safe on a wood table. I use mine on two pieces of tile I have.

Can I use this for canning?

Not sure it is really designed for the weight canning would place on it. I would not use it for that purpose

Good for cooking eggs but doesn't boil water well. The size is great for storing in a drawer. Easy to clean and move around.
