Food Processing: Principles and Applications

I bought this textbook for a class I am taking online. The book is really helpful to have. It explains all of the information thoroughly and accurately - such a life saver.

This was supposed to be a textbook for one of my classes but it's falling apart and I can't believe I paid over $100 for a book that is extremely dirty, covered in pencil marks, and barely bonded together.
