I asked Alexa to find me the best low-mercury sea salt to use for my sourdough breads, she recommended 3 brands with the lowest heavy metals in them and this was 1 of them. It's a great price and it works perfectly in my sourdough recipes. I was previously using pink Himalayan sea salt and I learned it had trace metals in it and I wanted a better option with newborns in the family. This is nice, it's smooth and silky and dissolves easily when I add it. I used it to season the inside of our cornish hens the other day and there was nothing negative that resulted from the switch in any instance.

I used to wonder why people paid for expensive salts I thought salt was salt and they all tasted the same. I was wrong. My favorite is still Maldon, but I now love Jacobsen when I want fast melting fine salt. Really great flavor!
