I’ve been using the Sabatier Edgekeeper Utility Knife for a few weeks now, and it does the job well. It's ideal for mincing herbs, cutting vegetables, and filleting fish, as advertised. The built-in self-sharpening feature is convenient, and the knife is sharp out of the box, making prep work easy and quick. However, after some use, I’m concerned that the blade might start dulling faster than I’d like. While it hasn’t lost its edge yet, it doesn’t feel like it will stay as sharp in the long run — possibly within the next couple of months. For now, it's a solid, reliable knife, but I’ll keep an eye on how long it stays sharp. Overall, a good buy for its price, but something to consider if you're looking for long-term durability.

I bought this knife for a friend as I use mine daily. They are very happy with it. It fits safely in the drawer and sharpens every time you use it. Very easy and safe to use as it is sharp. I've had mine for a few years and would definitely recommend.
