Traditionally made Kimchee would retain the bacteria that had fermented the cabbage, but most of these are killed if it is cooked and the rest are unlikely to survive the acid in the stomach or competition from the bacteria that live in the gut normally. Hope that helps. **Q: Is this a mild kimchi?** A: Yes, but that said "mild" is very subjective. To a Korean I expect it would seem quite bland. To someone from the US Mid-west it might be pretty spicy. I am from Colorado and my wife is from New Mexico, so very familiar with Tex-Mex food and light users of hot sauces like Tabasco. We find the KimChi to be a little on the mild side for a dish with chilis in it but we don't dowse it with hot sauce and enjoy it as is. I really must say this is one of the worst Kimchis I have ever tried. The only thing that was good about it was the cans are convenient. First of all it is extremely spicy, very spicy more so than what I am used to on any of the other Kimchi I have bought. It definitely tasted processed and in a can type flavor, it was terrible I’m so sorry to have to say that. I absolutely will not ever buy it in a can again, I don’t care what other reviews say! I will stick to the fresh bagged or glass jar that is shipped refrigerated in ice packs. I only took a small bite to know this was not for me at all. I actually threw the can I open as well as the other remaining unopen cans straight into the garbage. It was sincerely that bad.
