Put in a few coals and when hot smeared some Crispy Puck all over the top. I used way too much. I was concerned that the middle Grill insert was a bit small. Mine seemed to have a larger gap between the Griddle and this middle Grill insert. I contacted this Seller via Amazon and left my phone number. Within an hour a Customer Service Rep from Arteflame actually called me! He explained my version was an improvement over the first generation which fit a lot tighter. The old version would tend to get stuck when the Griddle got hot since the tolerances were too close or tight. This Rep also explained to me how better to season this new Griddle. I wiped off the excess oil, added more charcoal and adjusted the vents to attempt to keep the heat about 350. I just cooked 12 smash burger style hamburgers. Not much flame over, almost no sticking, they turned out fantastic and I am NOT a cook or grill-master. I gently scraped off any excess food into the middle and down into the charcoal. I am leaving this season a few more hours. I will wipe it down with a tiny bit of FLAXSEED or OLIVE OIL once cooled. The bottom will NOT rust since it is chared black from the hot coals. The cooktop Grill will not rust if I keep a thin layer of oil on it. My original Weber Grill Grates rusted after 2 years. Buying extruded aluminum Grill Grate brand was an option however with this Arteflame I get the versitility of a Griddle with a Grill insert for those "grill marks"! I am a huge fan and will be griddling out again soon! This is not a skimpy piece of equipment.Excellent addition to my kettles.That being said, i have multiple kettles. I have this on my performer with a bbq vortex under the center grate. This is arguably the best combo for this. The vortex heats the ring up rapidly to get you to to cooking temp on the surface.The cast grate will get extremely hot with the vortex under it for ridiculous searing.Indirect cooking is not really possible if you go with the aforementioned combo, hence why I have it on a dedicated kettle. I can still indirect or regular cook on my other kettle and i can smoke on my WSM so it is no loss for my needs personally.But if you just want a sear monster with a flat top and dont care about indirector smoking. This 100% needs to be on your kettle.Overall, I am beyond satisfied and I cook on this more than my other units.Can still get extra crispy "kfc" wings, cook amazing steaks, veggies,eggs,bacon, tater tots right on the flat without falling in grates or using another pan on top. Perfect for my needs *by J***A on Reviewed in the United States on June 22, 2018* The media could not be loaded. I absolutely love this thing. I’d love a big Arteflame but they’re pretty pricey. I bought a Weber grill to buy this insert. I’m an avid home cook. I cure my own bacon, dry age my own meat, make my own sausage. I worked in fine dining for 10 years and only buy quality items that last. This Arteflame insert is high quality and built to last for sure! First thing I did was paper thin smashburgers. Perfect sear and one chimney of charcoal kept this thing ripping hot (450-550-should have tested surface area with IR thermometer) for over an hour. I cooked some thick 2 bone pork chops sous vide and put a perfect sear on them with this after. Wings, peppers, onions, eggs.. it’s a wonderful system and really offers a ton of versatility. It costs more than the Weber grill but the combo together for roughly $300 is such a steal. I can’t think of a higher quality, more versatile setup under $600. If you’re on the fence just grab one.
