Good Book
Recipes seem easy to follow with everyday ingredients

28% of the recipes are NOT slow cooker recipes.
So, I was excited by the reviews to use this book. I am not vegan myself, but I wanted to help my family to eat more vegetables more frequently to be healthier. This book had a higher rating than the vegetarian slow cooker book, so I went for it. Mostly, it's pretty great. Pros: 1.) The recipes are well-written and easy to understand. 2.) The recipes give great clarity into why you are doing what you're doing. 3.) There is a beautiful breakdown to help you know if something is gluten-free, nut-free, soy-free, etc. 4.) There are options to make your own broths, and a few different kinds, or options given of what to buy from the store. Immensely helpful for those who love to cook and craft, but don't always have free time. 5.) It includes nutrition information with each recipe, so great if you're trying to track that! 6.) The formatting is easy on the eyes and consistent throughout. Nicely done. Cons: 1.) A few of the recipes are bland in spite of their list of spices. I couldn't tell two of the recipes apart taste-wise, even though they shared only two of the same ingredients. I'm considered highly sensitive by everyone who knows me, so this was a surprise to me. I've never had this experience with any recipe book before. 2.) These are not all slow cooker recipes! That, to me, is annoying. I wanted a book JUST of slow cooker recipes. Doing some quick math, 72% of the recipes are slow cooker recipes, 17% are no-cook/salad recipes, and 11% are some other type of cooking method recipes (grill/pot/skillet). So, 28% of the recipes in a book that has a title indicating it is solely a collection of slow cooker recipes are NOT slow cooker recipes. That's nearing a third of the book's recipes. Granted, I don't have a problem with the recipes which are components to the slow cooker recipes. Sometimes, you need to do some browning or something first, but these are significantly NOT recipes for prepping for slow cooking either. 3.) The organization groupings don't really make sense to me. The recipes are broken out into "unbeatable basics," "main dishes," "stand-alone suppers" (isn't that the same as main dishes?), and "Sunday staples." It kind of seems like trying too hard to make a bunch of slow-cooker recipes fit the format of a regular recipe book. It would have been enough for me to divide it into breakfasts, snacks, and dinners, but these categories have a lot of overlap. They might mean something to the author, but they don't make anything easier for me to find in the book as the reader. Overall, it's a nice recipe book, but it should be more honest and call itself "The Super Easy Vegan *Mostly* Slow Cooker Cookbook."

Solid, tasty, easy, healthy recipes using pantry staples + veggies - you will love this book!
This book delivers what its name implies: Super Easy Vegan slow cooker recipes. I'm cooking for a man who's had an esophagectomy due to cancer, I don't have a lot of time to spend in the kitchen, and need supper to be ready and available between ~5p - ~8p depending on when he feels ready to eat. The slow cooker makes this easy cuz it keeps dinner warm for several hours on the low setting without ruining the meal. I like the chapter that starts with a basic recipe, like lentil soup, and follows it with 2 different ways to build off of it. The book has tomato-based, coconut milk based, and veggie broth based soup/stew recipes that have all been hits so far! Creative use of spices adds variety. An added benefit is that the yummy aroma of the food cooking works as an appetite enhancer! And to be clear, I just chop and dump the veggies in the pot, no fancy prep work. If you're looking for unique, imaginative, gourmet cuisine, this isn't your book. If you want a collection of solid, tasty, easy and healthy recipes using pantry staples and recognizable spices, this book delivers. I couldn't be happier with it!

Disappointed but not useless
Overall this book is a good addition to a collection of other plant based cookbooks, especially if you have a sensitive palette. The good: It doesn't assume you have a grocery store in you backyard and is meant for people who don't have access to fresh ingredients. A lot of the recipes require little clean up, most of the time I only needed to clean a bowl, cutting board and knife, crockpot and the measuring tools. This is a cookbook intended to be used regularly, rather than taken out to be used once every few months. I really appreciate a cookbook intended for everyday use by everyday, busy people. The disappointing: With the amount of spice heavy food I had hoped I had found a vegan cookbook that has recipes for someone who enjoys spicy food. This is not that cookbook. Almost every recipe that has any peppers in it has a very small amount and only suggests how to make it less spicy. This would be fine if the author had also considered people who enjoy spicy food and given suggestions on how to increase it but even adding extra peppers and spices a lot of these recipes came out bland.

Working Mom Produces Working Recipes for Working People that Work!
This has become my favorite cookbook, because every recipe I've made so far has been a winner in terms of taste, and is so easy to make! Why does this cookbook work where so many others fail? I attribute its success to the author's real- world role as a mother, with kids, living on a budget, and who works for a living, too! To succeed with her lifestyle, she needed to create recipes that were tasty, simple, healthy, and economical, and she's generously shared her recipes in this amazing book! Thank you! There is simply no substitute for real life, lived experience of people who live and work in the real world! This cookbook is the compilation of that real world experience! And so, if you're tired of, and frustrated with, the "ivory tower," chemistry lab-styled recipes of countless authors who are more authors than cooks and who lead you to wonder whether they've actually prepared, eaten, and enjoyed the recipes they sell to others to consume, then this real world, practical, effective, and successful cookbook is definitely for you! You simply cannot go wrong, I promise you! Every recipe has been a home run!

Delicious Recipes!
I'm not a vegan, but my husband is and I like to use my slow cooker so I bought this cookbook. I was not expecting much, but I have been pleasantly surprised. Everything I have made has been wonderful! Great complex flavors, filling and delicious. I love the Brussel sprout curry - great on its own or over rice or as a side dish for meat eaters. The Moroccan chickpea stew is also great - and cheap and easy to assemble with squash, canned chickpeas and tomato sauce , vegetable broth, some lentils and seasonings - you add Udon noodles at the end, but you could probably skip that if you can't find them. Whether you are vegan or not, this is a great cookbook to add to your collection of slow cooker recipes.

Ce livre contient beaucoup de recettes, mais pas seulement pour les mijoteuse! Je dirai seulement 1/2 recettes sont pour mijoteuse dont la moitié de cela sont des soupes et l'autre sont des vrai plats (ce que je cherchais) environ 1/3 sont des recettes pour les salades (moi je voulais du chaud en plein hiver pas des salades!) Le reste sont des accompagnements qui vont avec une des autres recettes. J'ai testé deux recettes de plat, à part d'être trop épicé pour mes enfants c'est bon (j'ajusterai simplement la prochaine fois).
