Commercial, restaurant style, curved boning knife. As an ex-chef, I am well pleased with the quality and price and comfort. If you need one, this will please you. 'Nuff said!

I Loved the knife the first 3 days stayed sharp, after that it was hard to keep sharp. used it on over 30 beef. If you aren't commercial it's good and light and simple. If you're commercial, find a good sharpener. Check in, it's Aug 10, 2025. The knife is almost worn down 1/3 it's original blade, and it cut hundreds of beef. Recommend it.Update march 2026: wow lasts a long time over 200 beef still going. 1/3 blade left. Recommend.
