Choose whichever shape and pattern you want, but Bulka is 100% the quality and construction of banneton you're after. SUPERIOR PRODUCT
These are so far superior to the bamboo style banneton they shouldn't even be compared to each other. These are a little pricey, however they are worth it. The statement you get what you pay for applies here. Your bread doesn't stick, you don't have to wash liners, they absorb moisture. My only complaint is you can't really clean them so some of my cinnamon sugar loaf leaked and there is nothing I can do about it that one has just become the sugar loaf banneton. If you tried to clean them they peel apart like a cardboard box in the rain.

The best available
This banneton, as mentioned in the item description, is designed for a larger sourdough loaf. However, it can still be used for a smaller loaf, although the results may not be as perfect. Since purchasing this basket, my sourdough-making skills have significantly improved. The price and quality of this basket are excellent!

Perfect support for cold retard
Perfect for 850-1000 boules. The banneton supports and your dough. I use rice flour to dust the banneton and the dough for trouble free release. The wood pulp material absorbs a small amount of moisture from the top surface of the boule, thereby enhancing crust structure and making scoring easier. Cleanup is easy - dry out the banneton in a warm oven, bang out the excess rice flour and store in a dry place. (Storing a damp banneton could lead to mold formation or wood pulp breakdown.) Construction is sturdy. It should last for years.

Less Deep
Less deep than my other banneton but my loaf came out with nice "oven rise". I was concerned because this banneton is about an inch less deep than what I have been using. The diameter is the same so I gave it a try. My go to recipe is 1000 grams with 80% hydration and I use a Lodge Double Dutch Oven. I think the extra hydration helped with allowing the loaf to rise even though it started out not as high as I am used to seeing. No problems with dough sticking and it cleaned up with just a few wipes with a brush. Overall I am happy with this banneton and it will go into my regular rotation. This is my Bleu Cheese/Jalapeรฑo sourdough.

Nice 9 inch proofing basket. It has a nice waffle pattern. Iโd like to buy a smaller one also

Very poor quality. Pressed paper product.
Not very impressed with the construction of this product. Looks like pressed paper. Photos of it on Amazon didn't clearly show how cheaply this product was constructed. But it clearly states don't wash...it would melt if immersed in water.

MUCH easier to work with than wicker
I tend to make high hydration doughs with a decent amount of wholemeal flour so they can get pretty sticky. Wicker is fine but if Iโm not super careful I can end up partly deflating the dough as I try to get it out of the banneton. This has never even been close to happening with this one - it just makes the whole process of bulk fermentation a breeze.

Pattern nicely transferred
My sourdough loaves tend to be on the smaller side and they donโt fill the bowl but the pattern is nicely transferred and the sides are tall enough to nicely cover the dough as it rises. It is made in Germany and I trust the fabrication.
