Why are these chocolates listed as "lite?"

Merckens refers to there milk chocolate as “lite”

How should I store this chocolate if I'm not using it for a while. Should i freeze it?

I keep it in a Tupperware. In a room that is not extremely hot like the basement. I read that freezing and refrigerating it causes the chocolate to breakdown.

This does not need to be tempered. Just melt at lowest temp possible for your purposes :)

Are the wafers gluten free and wheat free?

All Merkens melting wafers are always gluten-free. If, however, you buy them from a retail facility which then re-packages them after purchasing them wholesale, you should enquire of that particular vendor if they do the repackaging in a facility which also processes wheat products in the same area.
