There is NO non-stick coating of any kind in this product. The inner pot is made of the 304 stainless steel, which is a food-safe material. **Q: How well does the IP do making fork-tender, fall-off-the-bone moist country-style boneless bbq ribs?** A: The three foods I do exclusively with an instant pot 1. yogurt 2. ribs and 3. hard boiled eggs Because nothing does these 3 better than an instant pot. The ribs I cook for 18 - 20 min. because I like my ribs moist, cooked and NOT "Fall Off The Bone" then cut the individual ribs apart and put under the broiler for 4 min on each side covered with BBQ sauce. Chewing the meat off the bones and eating with my hands helps remind me of where I came from. **Q: 6 qt versus 8 qt ?** A: I have both the 6 quart (2-4 people) and the 8 quart. If you wanted to cook a whole chicken, the 6 quart is too small. It’s also too small for anything more than 1-1/2 racks of ribs. For cheesecakes is about the right size for 2-4 people. I also make a large pot of soup with the 8 quart and then freeze the left overs. **Q: What are the differences between the Plus and Ultra version ?** A: There are places you can look up the differences. I have owned both in the past. If you consider yourself a fancy cook, even a fancy home cook, the ultra is probably the one you should go with. However, if you like things to be on the easy side, and go with the plus as it is easier to operate and does the same things. Another advantage of the duo, is that the handles have holes in them so that when you remove the lid you can set it in one of the holes without having to put it down on the counter somewhere. The most important factors of a good review are 1. packaging, 2. instructions, 3. shipping ( which has been less than agreeable ), 4. product customer service, and, 5. product performance and durability. Of the first two factors, I am very happy that this product was well packaged and the instructions are easy to understand and very well written. Plenty of diagrams and pictures and warnings, but the reading must be done before attempting to operate this pot, if you want to become proficient. And to answer anyone's question, no I am not a professional chef! I buy spices directly from the San Francisco importer for freshness which deals in pounds and put them in quart canning jars to keep them fresh longer. And my cabinet doors are off to eliminate opening and closing which is a redundant action. So, for this first review, I am very satisfied with this product and hope to produce amazing recipes. I think all kitchens should have the right appliance to do the right process. One appliance does NOT fit all cooking situations and I will continue to add. I did Bok Choy, Chard, Red Onion, chicken seasoning, sea salt, garlic powder, fresh ground black pepper: 1.5 cups of water in the bottom of the Instant Pot, 2 minutes pressure cook, and beautiful. Next time, 1 minute because I like a bit of crunch on the veggies. But beautiful! Next Broccoli, Cauliflower, Green Beans, Asparagus, Collard Greens, Beets, Butternut Squash, Yellow and Acorn Squash, and any other vegetable that can be steamed!
