Works if you keep whisking for 10 minutes, but texture is slimy and should use in moderation...
Following the recipe on the website by Eddie Shepherd, the chef who designed this product, I added a bit less than 1% of powder pre-mixed with same quantity powder sugar to goat milk and made a large tub of frothed milk.After whisking 10 minutes with electric stand mixer, the foam looked impressive and it stayed whipped for a few days. However, when eaten as it is, slightly slimy texture was not so pleasant and the goaty flavour tasted stronger. I added the froth to coffee which created an instant cappuccino look, but it left scum look mess at the rim. I would try 0.5% or even smaller percentage next time to achieve lighter more melting texture.It is impressive that you can convert any liquid into foam. But the extra stickiness to make the foam stable doesn't always work with what one tries to achieve. The best way to experiment is to use in moderation. It is also important to mix the powder with another powder which dissolve in liquid easily, like sugar. A small quantity of powder sugar doesn't change taste much, and it makes a difference in texture: lump-free.

Works really well to make vegan meringue
Used this to make vegan merengue using chickpea water and sugar! It works really really well!Can only really be used for stabilising liquids that would already whip up but need stabilisation when cooking as you can only use a little bit without changing the texture.Adding too much causes the liquid to go slimy and isn’t overly pleasant to consume.But when used correctly works amazingly!This pot is absolutely huge so would last a long time if not used often.

Maybe it's just me, but this didn't work for me
In many ways it is lucky our Christmas was cancelled as my Vegan guests would have been so disappointed... I tried, I really did. I made my first lot using oat milk, I was aiming for cream for a vegan black forest gateaux... i whipped it and whipped it until I thought my Kenwood was going to explode it was that hot, but it didn't thicken at all. I tried almond milk, fruit juice, upping the ratio, but it just wasn't good... Also needed to make 'meringue' so attempted that with much higher ratio of the powder....it did eventually froth and I did pipe it, but it was a bit like piping the froth you get in a bubble bath...there was no definition and it just looked sad and grey in comparison to the glossy white peaks of the real thing. I dried/cooked it as per the instructions and it did have a crunch to it, but it was not good. I have it now, so will continue to experiment, but from my trials so far, I would never buy it again. Just for the record, I am not a novice cook as I cook for a living, but this has beaten me so far. Happy for any suggestions or advice to make it work :o)
