Will this work on aPiece of plywood to make jig saw puzzles on?

As long as you have screws that are not long enough to go through top of plywood , it should work fine . The piece of wood I used is 1 inch thick. It makes a great turntable

Can this be glued to granite?

You could, just depends on how you prep the granite and what adhesive you use. But remember these have ball bearings so dust can build up and clogg them up. So might be best to not glue them down.

Works well for my application.. Be aware that the actual size is not what is listed. The title says 4". It's 4.72" so be careful is size is a premium. (There is a picture with exact dimensions, but the title is misleading.) Turning isn't completely smooth, but the build seems very solid.
