They produce a very pleasant smoke that worked really well for my application. After leaving the cheese in a vacuum sealed bag for at least 2 weeks in the fridge, I was left with a delightful smoked cheddar that was smoky, but not overwhelmingly so. Applewood was definitely a good choice for this application.
