Will this fit mauviel handles?

Only if the handle is not wider than 1-1/4”. And keep the length in mind as well as the shape of the handle tip.

The listing states 3 dimensions, but the pans' handles are basically flat. Which dimension is the vertical one, and why does it need to be so large?

The dimensions in the listing make no sense. It fits the handle perfectly and is 1/2” X 8” X 2”.

how many items can i get?

As many as you want. I bought 4 of them………. but there is a problem when you put them on, they tend to twist or a heavy pan or so I don’t use them anymore. Hope that helps
