Difference between vge 12-3 fingerstyle and vge 12-2 rhythm

VGE12-3 is made of Sapele laminated wood so that the tone is Bright, Rich High, Mid End, Great Response which is suitable for fingerpicking, the VGE12-2 is Spruce laminated top and Sapele body, the tone is Warm, Rich Mid, Low End, Great Sustain, which means it would be good to play rhythm for singing together.

I have this guitar and I was wondering if I could put strings in pairs?
