Messermeister Pro-Touch Pastry Crimper and Sealer, Orange

Creates a nicely sealed edge on pastries. First use was puff pastry, dough was room temp and had a bit of egg wash on the top. This crimper actually cuts the edge off the pastry and crimps simultaneously. Unfortunately the dough cut off the edge stuck to the wheel which lead to the necessity of cleaning every 3rd pastry. Not great in a high production environment. The wheel does not turn easily as would a pizza cutter for instance, but there is a wing nut so there may be some adjustment to be had.

as a pastry chef, i can't believe i am only just discovering this wonderful little tool. i used it for making peach fried pies~~ put my filing in, brushed the edges with egg wash, folded the dough over and pressed them together a bit...then just zipped this on the edge, and it was sealed and crimped. done. the dough does get caught a bit in the wheel...but it is easily removed. all in all, still much quicker than the old-fashioned fork method.... and prettier, too! if you like to bake...this is a great gadget to have in your tool box!!

This crimper/cutter seems like it would be a good idea, but just a couple strokes and bits of dough get caught up all inside and around the crimping edge. The center is hollow and you can take the device apart by unscrewing the nut in the frame. However it then falls apart into 3 or 4 pieces which are difficult to all hold together to get screw back in and the device reassembled after you clean out the hollow areas that are full of bits of dough. And after this time consuming task, then just one more stroke and the inside and edge are filled with bits of dough again! Good product concept, but terrible, unworkable design. If they had a solid edged crimper where the steel alternated being indented and being raised, then you might be able to wheel your way along dozens of pastries and crimp them all. But this design with individual teeth around a hollow center only renders this device useless. Too bad, I really like Messermeister products, but this one is not ready for prime time and needs to go back to the drawing board!

Vert uncomfortable to use, nightmare to clean

Works amazing to make pastry. Only thing sometimes the dough gets stuck but you can take apart the thing and put it back together. Works so well!

Awesome gadget! works great at sealing and cutting all sorts of pastry items.

Unfortunately it does not work well o soft doughs. I had hoped it would make it easier to seal mushroom turnovers, but it just ripped the dough. Back to pressing with a fork.

Works poorly. Very disappointed. Certainly not worth the price. Instructions would have been nice.
