Quality and value.
Victronox makes very solid knives. They usually don't look as nice as this one does. If you want a slightly grippier handle they make this knife with that handle too. This type of boning knife is nice as it's kind of a hybrid between a traditional style and a fillet knife. I use this knife for chicken and fish a lot. It is good for red meat too but if that is your only use I would go with a heavier,forged, traditional style. The stamped blade is nice and thin with good flex but not to much. The edge out of the box was very sharp and it sharpenes very well. Great value for a knife you probably won't use every day but if you do you'll still like it I think. I have Shun, Whustof, Tojiro, and Mercer knives for different purposes but if I needed a boning knife I'd buy this one again.

I use it every day to trim 15+ brisket.
I'm a pit master at a BBQ place and I've been using this knife for 3 months now. I trim brisket every day with this knife and I can trim 15+ brisket at a time without needing to sharpen it in between. I've had no problems with it, it's a good size, good quality, I have no problems with the cost, durable, doesn't dull easily, and has a good grip.

Victorinox rosewood handle 6-inch boning knife with a flexible blade is stamped and it's very easy to sharpen. i need this knife because i remove a lot of fat from pieces of beef,pork,chicken. i need to add this to my knife kit for work. It was a good price and made with quailty.

Victorinox Swiss Army 5.6606.15 same as Froschner 40017
I purchased this knife to replace a 20+ year old Forschner 40017 that I used for boning many deer and misc daily home food prep. First off, these knifes are no longer labeled "RH Forschner". Nor are they labeled with the model number "40017." I have purchased two from different Amazon merchants thinking I was going to receive the Forachner 40017 and each sent me knives labeled with the company's new brand name and model number, "Victorinox 5.6606.15. Probably the same knife as the old Forscners, now manufactured in Switzerland by Victirinox Swiss Army. According to one of the Amazon Merchants Forschner changed names to "Victorinox -Swiss Army" several years ago and the new knifes are of better quality than the older version. Update 10-21-2017: Purchased a second one. Keep one in my trailer and one at home. Can use to bone out a deer, chicken or even an average sized (12' to 36") fish. Easy to sharpen, holds edge very well and it's an excellent Value!
