I try very hard to not eat regular ice cream because when I do, I have digestive issues.  Of course then, when I don't eat it I feel deprived.  Sometimes, I like to buy the more paleo ice creams that are sold in health food stores, but they are very expensive.  I'm not sure why, but it had not occurred to me that I could make non-dairy ice creams at home.  Luckily I still own my ice cream maker.  I also used a food processor and a Nutribullet to make some of the recipes.I like that the author specifies which types of recipes can be modified/ experimented with and which can not.  That worked well for me because after making the first one with honey, I decided I wasn't as fond of the honey flavor and made some with coconut sweetener and with agave nectar.  Note that many of the recipes are made with eggs so if you are a person who avoids eggs, these may not work for you.One of the issues I had with the recipes in the book that was challenging was that many of the recipes require you to make the mixture and then cool for 2-8 hours.  I felt a bit like an impatient person because I wanted my ice cream NOW.  Luckily, two of my favorite recipes gave me that instant gratification.1) The first recipe I tried was the Butter Pecan ice cream with a coconut base.  Quite tasty - I ate too much of it!  The next day, the leftovers even tasted good without the pecan pieces on top.2) The next one was Mint Chocolate chip ice cream, also with a coconut base.  I liked it even better- except the waiting part.3) The Banana Almond Butter Ice cream caused my 13 year old daughter to say loudly "This guy is a genius!".  With only three ingredients, and the ability to eat it right away, I'm sure we will be making that recipe many times.4) The Banana Nutella ice cream was just as popular in our house.5) The Lemon Sorbet was very satisfying, I made it with agave nectar instead of honey and with real lemon juice. It tasted like the real thing, not some over-sweetened sorbet you buy.I'm looking forward to trying some of the other recipes in the book such as Mocha Chip, Chocolate Raspberry, Chocolate Pomegranate and Cheesecake ice cream.  There are many really unusual recipes in the book, flavors that would never have occurred to me such as Goat Cheese ice cream, Black Peppercorn and Green Tea ice cream.  Maybe some day I'll branch into these other ones.  For now, I'm content with the more normal flavors.

    Healthy, Cooling Summertime Treats are Easy and Fun to Make!

I received this book a while ago and put it aside until the now-coming warmer weather.  'Paleo Ice Cream' by Ben Hirshberg is a welcome addition to my Paleo/Primal library and will be well-used this summer.  The book opens with an enthusing table of contents and then goes into helpful lists of substitutions for ice cream bases and sweeteners, how to change the consistency and sections on ingredients and tools.  These laid the groundwork and inspired my creativity for what is a simple and fun process to easily put together lots of cool treats.  Anticipating some kid-friendly kitchen activities too.While the only photos are on the book cover, the font style, size and page arrangement are excellent...easy on the eye.  Recipe instructions are numbered and only occasionally go beyond five steps.  These considerations will be much appreciated when working with a pint-sized sous chef - or should I say 'soda jerk'?Recipes include regular "classic" ice cream flavors as well as frozen drinks, sorbets, custards, vegan options and even toppings and other add-ons.  One section of 'Adventurous Flavors' sounds a bit outlandish but maybe I will give it a try one day -- Cayenne Chocolate, Goat Cheese, Cucumber Mint, Maple Chocolate Bacon, Chocolate Stout...!?!!  Using everyday whole foods whips up a healthy dessert to feel great about!Just now I was looking at a pile of over-ripening bananas sitting on my kitchen counter and after a quick look in the book, I am ready to put them to good use in one or two of the ice creams that call for them.

This book has all the bases covered.  No ice cream maker?  There are instructions for making the recipes with and without a machine.  Can't have eggs? There are vegan and sorbet recipes. Can't have nuts? This book has nut free recipes too.  It also has banana free recipes for those who don't want a banana based ice cream.  Need some inspiration for toppings and add-ins?
