I had the good fortune to dine at Paul Bocuse's flagship restaurant in Lyon France several times and came away with a heightened appreciation for food as an art form each time. This book is both encyclopedic in the breadth of topics covered and thoroughly illustrated. It's a great addition to any kitchen's bookshelf.

While there are a number of excellent recipes. In this volume, its greatest value lies in its treatment of the subject of food - its selection, preparation , storage, etc. it is a book that is truly enjoyable to read and I have learned much about food in various cultures.The book deals with philosophy of food and the entire environment around food. At the end of the book, there is a chapter that covers the table setting, treatment of guests, etc. Quite eye-opening.

If you consider yourself a foodie and like to cook, this is a book that you may need to add to your collection. If you really are foodie, you do have a collection.

I feel that every student of cooking, whether at home, in the kitchen of an American dinner, attending a small or large culinary school, should own this book. This is one of my treasures of the 20+ cookbooks I own. It’s like a crisp glass of wine. Lovely in every form. I love the simple explanations with each section. It leaves you with an open view of what do with imagination. As is said, “POWER TO THE IMAGINATION.” “Once we have grasped the fundamental rules, we can use familiar recipes to dream up our own.” This is the secret to a treasure, like learning to walk or riding that bicycle all alone. I tell you, there will never be a regret if you purchase this volume or powerful knowledge. What a wonderful gift to us all. A book that should be in every home, ever school and passed down to the next generation, again and again. Something never lost with each new Generation, but a gift that could say their lonely lives with great civil acts of good taste and generosity.

Mine, like many others, came slightly crushed. What's in the book though is great with a lot of colored pictures and easy to understand steps

The book it’s a lot bigger than I thought it looked small in the picture but I was wrong 😂 also arrived earlier than expected which I like.
