Q: I bought this but cannot find recipes to use it. Any suggestions? Also, do I have to add vital wheat gluten?

I adapted a recipe from Steve Gamelan no-knead Bread cookbook.I bought this on Amazon. How I learned breadmaking. I use 1 cup of this flour and 2.5 cup bread flour 1/2 tsp instant yeast,1 tbsp sugar,1 tbsp EVOO;1.5tsp salt in 14 oz cold water; add the flours and mix to shaggy dough.cover bowl with plastic wrap.leave to rise overnight.8-12 hrs. Next morning, punch down to degas. Allow to rise 30 minutes in warm place. I do this in the covered sprayed loaf pan. I turn on my old electric oven and place the pan on the stovetop while the oven preheat to 400 degrees f. Bake in middle of the oven for 40 minutes covered. Then remote cover and if crust isn't crisp enough,bake uncovered to addl 5-15 minutes. Cool completely on wire rack. I haven't purchased bread in 2 yr. Total prep time: 15 minutes before bed and 15 minutes while the coffee brews. The equipment cost me less than $10 at Wal-Mart. I use a ratio of 5:2; bread flour to any whole grain flour to yield a 1-pound loaf. I feel incredibly accomplished having learned to produce delicious bread at age 70. Who says you can't teach an old dog new tricks😃

Q: Is this multigrain whole grain or is all the goodness stripped out like white wheat flour?

I believe it’s whole… makes a dense and heavy loaf with a rich flavor. I use it in my bread maker with a recipe out of the book for the machine.

Q: Will this work with a bread machine?

If you do use it in a bread machine, make sure that you don't use too much. Use plenty of white flour. This flour is very heavy and does not rise easily.

Q: Expiration date? Storage life?

I purchased mine April 2023, expiration date was Jan 2022. Non-returnable, not happy.

9-Grain Bread Flower

I used this in my bread machine with regular bread flour and it was a hit. The container amount is perfect for making many loaves of bread. The flour has a good taste and using with other flours makes the bread noticeably less dense. It is a good value for the price on Amazon. It is easy to use and creates good color and texture when baking with this flour. Definitely worth the price.

Great flour for bread

I use this together with white flour and sprouted wheat flour - makes a wonderful loaf of bread. Nice texture and good rise. Makes a nice loaf if you want to show off your baking skills.

Great flour

After my first order was lost (or stolen) I re ordered 2 pails. Happy I did and made some really good sourdough grain breads.

Excellent, but Not Gluten Free

This is excellent flour, although rather dense, so you might have to adjust your recipes accordingly. Good flavor.However, the label says "Gluten Free," yet the flour includes "hard red wheat, oat groats, rye berries, dehulled barley, soft white wheat, hard white wheat." Doesn't seem gluten free to me.To be fair, the flour is listed on Amazon under wheat flours.

Makes fabulous bread

My friend was telling me that she purchased a whole berry wheat and ground her own flour for her bread, she said it weighed so much she was afraid if it fell it might put a whole through her floor, very heavy, so I opted to purchase this flour already ground into a very fine powder, makes a very good flavored bread. I will be ordering again, also I told my friend to buy it.
