Are the holes small enough to keep grape seeds in the sieve and not slip through the holes into the sauce?

I think they are. I used it with blackberries and didn't have any seeds come through.

Would this work for preparing fruit to make fruit leather?

I haven't used it for that but you should be able to. It will hold onto the majority of pulp, however. Not sure if that's whats needed for fruit leather.

What size volume? 1 quart? 2 quart?

Since the strainer is 7" across and approx. 8" deep, the calculator I found on the internet show the volume to be approx. 102.63 cubic inches, which translates to approx. 56.87 ounces
