Best boning knife I've ever used
I've needed a great knife to cut up whole chickens for a long time. This one fits the bill perfectly. The handle fits the hand at the correct angle and the blade finds it's way better than any others I've used. Super sharp too.

Budget Friendly, Good Quality, Sharp Knife for Trimming Meat
Saw this knife advertised in a youtube video for trimming brisket. I've had issues finding budget friendly, good quality, sharp knifes when trimming meat. This knife lived up to its reputation. It is very sharp, gets the job done, and you don't have to spend a fortune on a knife.

Outstanding 6" Boning Knife! Superb value for the price and excellent ergonomics.
I am a professional Home and Personal Chef and teach cooking skills. Knives for me are essential tools in my culinary activities, and I am picky and critical. I have tested and reviewed MANY knives here on Amazon and elsewhere. I will praise those that deserve it and be highly critical of those that don't. What is most important to me is the knives I use are for "cooking”…not "looking". Performance, construction, and ergonomics are the key metrics over aesthetics for me and for honest critical reviewing. This 6" Mercer Flexible Boning Knife is a masterpiece of design and function. Clearly made for professional use, it has a perfect flex for various uses and delicate cutting applications. The handle is highly ergonomic and made for extended use without discomfort. The blade itself is razor-sharp and easy to resharpen when necessary. This is a boning knife you would likely see being heavily used in professional kitchens where performance and safety are the key elements for knife use. In addition to this 6" model, I also own the 8" model which is a virtually identical design and also my favorite longer filet knife. Mercer has clearly identified the needs of chefs in their products, and ensured that ergonomics, performance, and construction meet the needs of the most demanding chefs...all at a price that is almost an unbelievable value! I have never been able to break down a whole chicken as fast and easily as I have been able to do with this knife. Forget looks and impressing your friends. If you want to really cook, this is the knife you want for its purpose! It's an absolute FIVE STARS from me and an honest and VERY hearty recommendation. All the Mercer products that I own are of equally high value, and this one just adds to their success! Light, sharp and flexible.
I got this to trim large cuts of meat, such as brisket, smaller cuts such as rib eyes, and to bone game birds, mammals and fish. It’s sharp, light and the grip doesn’t get slippery. It’s great to carve soft cuts of cooked meat too. The knife is very sharp and flexible making cutting out and around bones, along with skinning fish, easy. My wife told me to be careful or I’d bend the knife too far and break it. It hasn’t happened yet but if I broke it, it would fairly inexpensive to replace.

Good boning knife for the price
This blade pattern is available in two versions, one flexible and one not. I bought both. After cutting up 3 deer, the verdict is that the flexible version is more useful. Both sharpen easily on an oil stone and keep an edge fairly well. A couple of licks with a steel brings back the wire edge for another session before you need to sharpen the blade again. This replaces a couple of Chicago cutlery boning knives that were the previous go to tools. I also find the straight blade to be a better boning shape than knives with a swept up "skinning" profile.

Very sharp knife from day one you will love it!!

Easy to grip
Easy to grip, even with wet or greasy hands, this knife also delivers on flexibility and edge. I have one other Mercer knife (a 7-in chef), which I am delighted with, so I was pretty sure I was going to like this one. And I do. The knife came with already sharpened to a fine edge and was ready to wash and use. Which I did, carving two whole roast chickens in nothing flat and with very little fuss, muss, or waste. If you're looking for a good knife that will last you for years, you should save the extra money you'd have spent on the fancy expensive knives, and get some Mercers. Practical, durable, and a real workhorse.

The knife has a large handle which suits me perfectly and gives me a good safe grip, my wife who has small hands finds it too bulbous. The knife is sharp and good for skinning salmon fillets. It is extremely good value I would recommend it as long as you could live with the handle.

Coltello eccezionale. Acciao di qualità con le giuste caratteristiche per il disosso. Lama pieghevole senza essere troppo morbida. L'ho affilato e poi ha lavorato perfettamente. L'impugnatura è eccezionale. Ergonomica e consente l'utilizzo anche con le mani scivolose. Visto il prezzo, una bomba. Per chi non lo conosce, marchio americano per la ristorazione. Great knife, bought to bone a rabbit and since used a lot for all sorts of boning or cleaning pieces of meat. Still very sharp. Good value for money. Update July 2024.. have never sharpened it, just a couple of times against a steel..it is still as sharp as it was when I bought it. My go to knife for boning and cleaning up and diving meat. Extremely good for very thin slices of tomatoes too. I have a set of Global knives ( ok ,25 years old) that I get sharpened professionally every few years, but this knife is just something different..for £12...

I bought this as an alternative to Victorinox flexi boning knife(6 inch) and the first thing that was obvious to me was the difference in the amount of flexibility that this knife has compared to Victorinox(or any other brand for that matter). While this knife is great for every day home use and light industrial work, it will NOT be suitable for boning large beef carcasses as the knife is simply too flexible and will break under excess pressure. The knife comes in a sturdy protective packaging and it is very comfortable to hold. It has a durable, razor sharp edge that didn't disappoint even after prolonged use on beef carcasses. For intensive industrial work(boning), I would recommend something harder though.
