    Perfect for a quick and healthy meal!

This soup is delicious. As a busy mom, I'm a fan of these kinds of quick and healthy meals, but I hate the amount of sodium they contain. I was excited to find that these Yelli soups contain to no sodium. Preparation couldn't be easier. I literally dump of box of broth into a pot, bring to a boil, add the soup mixture, and simmer to 25 minutes. The amount of sodium in the boxed broth is enough for our taste. The bag says it contains four servings. Realistically, it's two soup bowls- perfect for two to share as a main meal. I serve this particular flavor with a piece of whole wheat Naan. No, this soup doesn't beat homemade from scratch, but it comes pretty darn close, and is made in a fraction of the time with no effort. I have also tried Yelli's Wild Porcini and Whole Grain, and found it equally delicious.

A pretty good base for a fast meal. I used broth instead of water, and the second time I made it, I also added curry and some accompanying seasonings; it's a bit bland. But real world time from decision to soup is actually 25 minutes plus the time to boil a quart of liquid, and that's not bad! (Especially since it's cooking on its own for most of that time!)

This is an excellent soup by itself and also a great base for experimenting. Not to offend non-meat eaters out there, but I used chicken stock the 2nd batch I made. The 3rd time I added some sauteed (turkey) bacon and (turkey) ham and used a roux to thicken it a bit. They were all delicious!
