Unpleasant Taste and Odor
Iโm not satisfied with this purchase. The flour has a strange taste and odor that resembles spoiled or stale product. Iโve used millet flour regularly, so this was unusual. I hope the manufacturer reviews storage or freshness standards.

Great unique flour option for bakers
Finger Millet is gluten free - which will be very prized in that community, but it's something you need to know if you are baking regular bread and want to substitute this as part of the flour mixture. I personally couldn't get a good loaf after I put more than 30% finger millet in by weight - it just wouldn't create the gluten structure I wanted - even when adding in extra gluten to compensate. I found the texture and flavor of a 15% finger millet sourdough loaf to be very nice indeed. That was the sweet spot for me. It didn't impact the texture too much - but it gave it a nice grainy and richer flavor. You definitely knew it wasn't a 100% bread flour loaf - but you may just think it had regular whole wheat flour. Any loaf would benefit from 5% of finger millet as it adds some health benefits through its unique minerals it contains. And at 5% it doesn't impact the texture or flavor at all really. You may jsut think someone added a bit of whole wheat flour to the bread, but it's barely noticed. You also don't get any of the side effects some people have from too much millet. If people have thyroid issues - please don't use millet. It can cause issues. It also has more fiber and minerals that can cause bloating if people are sensitive to that - so just be aware. I strongly recommend serious bakers play around with this flour though as it adds a unique element and is quite enjoyable when used near its max levels.

Do not like smell
Nope, the millet looks goods but it smells duty or muddy. I cant stomach the smell of it. I feels scanty in the mouth too. Am sorry but i wont be ordering again.
