Q: Is the stained model also pine it appears to have an oak grain which would be preferable?

Definitely pine, I used a dremmel to sand off some stain from the holds so that the grip wouldn't be slick and it sands very easily

Q: Is the stain nontoxic?

No way of knowing. But it’s holding up very well above a door jam. Lots of use and the wood looks great still

Q: Do both of the color options have a finish or is the natural color unfinished? From my experience a finished piece of wood will be more slippery.

The color finish DOES make is slippery. I sanded it and roughed it up
