What terminals do I run my pressure switch to ? On an air compressor

The pressure switch needs to INTERRUPT the wire that goes between the power on-off switch and the motor.

Which two terminals control the coil?

I think they are 96 & 98. depends upon what you want to connect to the coil. I dont think you can directly connect an E-Stop to this switch.

Does this do the same thing as a magnetic starter?

Yes a motor starter with overload relay which you need to be sure it is sized right for your motor protection

Can you start a 5 or 7.5 hp motor with this switch

I have used several of these in industrial applications and start 7.5 Ho Motors every day. Just make sure what the FLA is on your motor, doesn’t read over the current limit on this starter.
