**Q: Can you place this directly on a hot plate or stove top to use as a Bain Marie or water bath?**
A: Yes the pan is made of stainless steel

**Q: Can you bake with it?**
A: I think  it is intended for cooking steamed dishes, not for baking

**Q: Are these 201 or 304 stainless?**
A: It's definitely 18-8, It's clearly printed on the bottom of my pan. However,  304 and 18-8 are basically the same. It won't rust, even when I use a stainless scrubbie and run through dishwasher. It's the same as you'll find in any restaurant. Still like new after all this time and use.
