Because they were now sprouted, I cooked them on low heat, which took a little longer than most people would want to spend cooking flatbreads, but it is so worth it when you understand the nutritional value of sprouted legumes. I did not think they would because they are split lentils...but they did, and the flatbreads turned out great! Here have chickpeas, homemade nut sauce and sprouts on the flatbreads I made... Oh, did I mention that the cost of these legumes was very well worth it. I have already bought this item twice and will do it again in the near future. Review: Great Egg Replacer, but not without some drama. - I got this to make my own "Just egg" and it works, but several factors had to be learned the hard way to get it right. There are a lot of recipes out there for making your own Just Egg and some vary depending on the level of duplication you want to put into it. Some just use water, while Miyoko Schinner adds additional ingredients to make it more like the commercial product. The Recipe I used is as follows: Rinse one cup of Moong Dal like you would for rice, till the water runs clear. Place in a pot with four cups of water and allow to soak in the fridge for at least two hours or overnight. Drain and place the dal in a food processor. Add 1 1/3 cups of water and a dash of salt and blend till creamy like pancake batter. Heat a non-stick teflon skillet to medium high heat. Pour a small amount of the batter on the pan and add your veggies, cheeses and or "meats". Allow to cook till it can be lifted up like a slightly runny pancake. Fold over and continue to cook till the cheese is melty. Flip if you want to but the cheese may melt into the pan. Once cooked till firm, place on a plate and sprinkle black salt for that egg like taste. I cannot stress enough that you really cannot manage this product as an egg replacement unless you use a teflon non-stick pan. Nothing else gave me the same results. I have an expensive hexclad and I used to have a scan pan and despite being non-stick, the just egg was like glue. Even when I used copious amounts of oil. But the best results I got was with a cheap non-stick griddle I have. I was able to make delicious vegan omelettes with it, and loved the fact I saved a few dollars in the process. I recently tried microwaving it according to a you tube video and it worked, but unless you clean the bowl between batches, the residue will just cause future batches to stick. When I was done, I literally had to use an SOS pad to get my bowl clean, it's that tenacious. As far as other recipes, I will probably look into those, but for now this is an excellent egg replacer for making scrambles and breakfast skillets but remember to get your non-stick teflon pan as hot as you can. Amazingly enough, I never burned the product once, so it can handle high heat.

Sacred Moong Dal and the Hare Krishna Concept of Jiva
These are the best moong dal I’ve ever known in the USA. They originate from a Hare Krishna devotee in Texas, which makes them sacred and blessed. Perfect for making vegan scrambled egg mixture.
I use these to make a mixture that resembles scrambled eggs (once cooked that is). The fake or faux egg products available in the stores have too many ingredients and the price is way too high. So, I've been making my own vegan egg mixture for a couple of years now. It's a staple in my diet. These mung beans have great protein content as well. I make a "nomelette" a few times a week.

My new favorite pantry staple
This is my new favorite staple. I've just purchased it for the second time, and I'm amazed at how versatile it is. I will use it a substitute for rice, potatoes, or other beans. And the fact that it cooks so quickly is a big bonus! Very pleased to have found it.
