Aji mirin is the lower line, not a real Japanese mirin. I only began Japanese cooking in the last year,but I feel comfortable asserting that Ohsawa is a high end Japanese product line. I always try to buy it. There may be yet higher end Japanese brands, but I think you can use this as Hon-mirin anytime. As opposed to Kikkoman aji mirin. This is the real stuff if you buy kikkoman you get some flavorings with sweetened syrup not real mirin. **Q: Is this real mirin?
