You would need to check with you local or national agency to see if it is acceptable without certification. **Q: If not using all of them within 5-7 days, can you freeze them to keep the freshness?** A: I personally would not freeze it myself unless making some sort of compound butter with the truffle and herbs. Others may feel differently but this is my opinion. **Q: This arrived with no brine in my jar. Is it safe to eat?** A: The brine is very little that will actually be in the jar. It more so has to do with the process that preserves the truffles. You may see a teaspoon or two at most of the residual brine at the bottom of the jar. **Q: Are these pre-washed?** A: I don’t know. I didn’t wash them. They’re in a brine.
