This product does note currently have a halal certification. You would need to check with you local or national agency to see if it is acceptable without certification.

If not using all of them within 5-7 days, can you freeze them to keep the freshness?

I personally would not freeze it myself unless making some sort of compound butter with the truffle and herbs. Others may feel differently but this is my opinion.

This arrived with no brine in my jar. Is it safe to eat?

The brine is very little that will actually be in the jar. It more so has to do with the process that preserves the truffles. You may see a teaspoon or two at most of the residual brine at the bottom of the jar.

Are these pre-washed?

I don’t know. I didn’t wash them. They’re in a brine. I’m still alive.
