Q: Are both sides water proof? is it safe to install it on an outdoor gate?

Only one side is water resistant. The other side (battery compartment) is just a plastic cover with no seal.

Q: Does it have a privacy feature to temporarily lock out all users except the administrator

Only indirect. There is no button for this, but you can schedule the access for every user and temporarily ban them.

Q: Does it support HomeKit?

If you can program Siri Shortcuts, then you can have them control Google assistant. But not homekit.

Q: How much are you supposed to tighten the bolts to the door or deadlock

Until they feel tight enough to hold. Don’t over tighten.
