Great flavor for dried peas
Great flavor for a dried pea! I grew up in the south getting these fresh from the farmers market. I live in the north now so, this is my way to get them. My cooking tips! Soak the night before even if canning (these are very firm peas) I canned mine in pints- 75 mins with 1/2 cup of peas, chicken broth to 1” line, dash of Cavender’s seasoning, & 1/2 strip of bacon. I don’t like to add additional salt during canning so, I add that when serving. Adding diced onions would also be a good addition. Peas still maintained their shape and were not mushy.

I love white acre peas (which is what we call them ‘round here.) I have such great memories of my best friend’s mom, who was country to the core, and lived in Donaldsonville, GA. She used to made (fresh) acre peas and corn, and sometimes that was it! Maybe some sliced tomatoes and cornbread. I will never be able to cook them like Ms Jean did, but these were close enough to snap me back to age 17, and the amazing dinners she cooked. These peas were very clean, and cooked to perfection in about 1.5 hours. I like to soak them overnight in the fridge. The texture was firm, yet tender, and about 3/4 of a cup, cooked up with some sausage, fed three adults (with rice). Economical, and wonderful!

These are the tiniest little pieces of heaven you could ever taste! I’m cooking the second bag as I write this. I’ve attached a photo that isn’t so good so please forgive me, I’m used to developing my film! Bonus: not one bad pea!!
