Can you make panini/grilled cheese sandwiches with this iron?

This waffle maker comes with a pancake plate which can be used to make Grilled Cheese, Toastie, or Panini sandwiches. The Panini would not have the grill marks that are traditional, but the taste would probably not be affected. I breakfast sandwiches with English muffins, cheese, bacon, and egg. You could use a roll just a well. When using a roll or thicker bread use a lower toast setting to make sure that it is heated all the way through and toasty.

Does it open to a flat surface for cooking pancakes on both plates?

To me this is an unfortunate design. A much better option would be two flat plates and the top opening completely to the flat position. You could then use both sides to cook pancakes eggs bacon, make paninis, etc.

How long does it take to heat up? How long does each waffle take to cook?

It takes about twice as long to heat up and at least twice as long to cook the waffle or pancake as it dose with most other unit.
