Does this one have a switch to turn the sound off/down?

On and off button. This toy only sounds when the child pushes a key. It isn’t annoying at all. I took away the drumsticks as he is too young to run around with sticks.

What is the seat height?

I’m not sure what the limit is but my 30lb 3 year old rides it with ease. It’s pretty sturdy.

How tall is the seat if measured from the floor?

I don’t know as my daughter has it but it’s perfect for her one year Old. I think the measurements are Listed on the sight. Sorry I can’t be more help.

The descriptions says ages 1-3 years old, but there is a choking hazard warning. What is the choking hazard?

It has a little drum stick maybe 6 inches long attached to the drum at the top. It can probably be cut off if you want . That’s all I can think of.
