Delicious and mild
Getting harder to find a place to buy brick cheese here in So Cal for my german mom . Christmas day she loves this with summer sausage and stollen . This year we tried buying it from amazon and will continue to through this company on Amazon . Nostalgia is great especially for my mom that is 90 and us as well .

Great product. Not Prime eligible.
This is great out of the package. High quality cheese. Great flavor on my deep dish pizzas. I feel guilty given this a 4 star rating as that is unfair to the actual product. However, the added shipping cost makes the purchase price a bit high. That said, I can't buy this anywhere locally, so I will definitely buy again as needed.

Excellent cheese
This is a response to my earlier review and in receiving a different brand brick cheese than i ordered. Turns out the replacement cheese was exceptional on my Detroit pizzas and would have no problem in receiving this brand as a replacement.

Best pan pizza cheese. Gave away one brick that I had over a year but never opened. Never got moldy.

This is the kind of cheese my great grandfather used to make
I am 81 years old. My great grandfather died about 30 years before I was born, so I never met him. I grew up in the house with my grandfather, and there was a local cheese merchant who would stock Wisconsin Brick, and Grandpa kept it on hand most of the time. Being the matriarch of my family, I am the only one who knew Grandpa well. Some of my cousins were children when he passed. We were having a family reunion, and I wanted to share the kind of cheese that my great grandfather made in the small cheese factory on his dairy farm in Green County Wisconsin in the late 1800s to early 1900s. I was lucky to find this on Amazon.The flavor is not spectacular. It is similar to mozzarella but slightly stronger, and the texture is similar to American cheese. I probably won't buy it again, it was a one-time deal, but my family enjoyed the experience of trying Great Grandpa's Cheese.
